- Used in the making of Biltong (similar to jerky but air dried)

- Cut the meat into strips and weigh
- Calculate spice required @45g/kg of cut meat
- Optional: add Worchester Sauce or Vinegar @50g-100g/kg meat. Jimmy's Sauce can also be added to taste
- Mix the meat and spice well, cover, and refrigerate overnight
- Hang to dry
