Choosing the Right Beef Jerky Seasoning

You might like it sweet, you might like it salty, or you might like it spicy. American beef jerky often has a sweet teriyaki flavor to it.

We South Africans prefer our beef jerky (or biltong, as we call it) savory – and we often add similar spices to it to the spices you’ve probably eaten in curry! These spices include coriander, salt, onion, and paprika.

Choosing the Right Beef Jerky Seasoning

You might like it sweet, you might like it salty, or you might like it spicy. American beef jerky often has a sweet teriyaki flavor to it.

We South Africans prefer our beef jerky (or biltong, as we call it) savory – and we often add similar spices to it to the spices you’ve probably eaten in curry! These spices include coriander, salt, onion, and paprika. 

How to Season Your Beef Jerky

Seasoning beef jerky is similar to marinating a steak or chicken. Cut the meat into strips and place meat strips into a mixing bowl.

Mix about 7 tablespoons of seasoning for each pound of meat. If you want, you can add teriyaki sauce, Worcestershire sauce, barbecue sauce, or vinegar to the bag. Cover and refrigerate overnight before smoking or air drying.

But, if you’re worried about spice, you can always reduce the amount of seasoning you put on your jerky. Be sure to add a little extra salt to make up for the salt you’d be losing.

Making a Spicy Beef Jerky Seasoning

If you do want to add an extra kick to your beef jerky, start by putting in the normal amount of jerky seasoning. After you’ve put the seasoning in the bowl, add additional cayenne pepper or chili pepper to taste.  

You might be tempted to put in extra seasoning from the packet. We don’t recommend doing this, since you might end up with too much salt in your jerky.
