Droewors: South African Dried Sausage

Droewors is South Africa’s favorite beef jerky stick – and it’s about to become yours as well! Droewors is similar to American beef jerky, but it’s savory instead of sweet. And while American jerky is smoked or dehydrated, droewors is air-dried.

Air-drying sausage can take over a week. But the wait is always worth it! The slow drying process produces a tender jerky that is much easier to chew than American jerky. Droewors also doesn’t contain any added sugar.

Droewors: South African Dried Sausage

Droewors is South Africa’s favorite beef jerky stick – and it’s about to become yours as well! Droewors is similar to American beef jerky, but it’s savory instead of sweet. And while American jerky is smoked or dehydrated, droewors is air-dried.

Air-drying sausage can take over a week. But the wait is always worth it! The slow drying process produces a tender jerky that is much easier to chew than American jerky. Droewors also contain very little or none added sugar. 

Droewors vs. Biltong

Biltong, droewors’ cousin, is the sliced version of South African beef jerky. Both biltong and droewors are made with beef, seasoned with coriander seed, and hung to dry.

However, while biltong is a whole piece of meat and only sliced after it has dried, droewors is ground beef mixed with fat and spices and stuffed in a casing to make sausage before drying. Biltong is also cured (i.e. marinated in salt and spices) before drying, while droewors is a mixing and stuffing process.  

Biltong and droewors taste fairly similar. Biltong is a little saltier and moister than droewors, because it is cured.  

 

Droewors Ingredients

Our droewors is made from beef (80/20) and pork (80/20). The 80/20 indicates the ratio meat to fat. It is usually stuffed in sheep casings for thinner droewors and hog casings for the thicker ones. We prefer the thinner ones.

The seasoning you’ll taste on our droewors includes coriander seed, the sweet spice found in curry. You’ll also detect hints of clove. Don’t worry – our droewors isn’t too spicy.  

Droewors vs. Biltong

When they are fresh, the sausages are known as boerewors (“farmer’s sausage”), a common grilled meat in South Africa.  

To make droewors, the boerewors sausages are seasoned and air-dried for up to 10 days before serving.

Droewors is incredibly simple to make but you will need some equipment to do so. The equipment needed includes a meat grinder and sausage stuffer.

American beef jerky is a high-protein snack, but also contains a large amount of sugar and salt. You’ll find droewors to be a guilt-free alternative. It contains only lean beef, a small amount of mutton fat, and spices.  

Because of its high protein/low carbohydrate makeup, droewors is an excellent snack choice if you're an athlete or on a low carb diet.

And maybe we're biased, but we think droewors tastes a lot better than American beef jerky. It’s tender, it’s zesty, and its spices don’t cover up the delicious flavor of the meat itself.
