Biltong: South African Jerky

Biltong is South Africa’s answer to beef jerky and – in many ways, its lifeblood! Whether you’re at a South African rugby game, on a road trip, or even wine tasting, you’ll probably see the biltong bag get passed around. It’s tender, spicy, and addictive.

Luckily, biltong hasn’t stayed in South Africa. It’s quickly becoming a favorite high-protein snack in America as well!

Biltong vs American Jerky

Both biltong and American beef jerky are dried meats, but they are dried in different ways. While American jerky is smoked or dehydrated, biltong is air-dried for a longer time.

American jerky tends to have a sweet flavor (and a high sugar content!), while biltong is savory and contains very little, if any, sugar. If you use the same cut of beef, biltong is generally a healthier alternative to beef jerky.

Finally, while American jerky is in large, sometimes stringy chunks, biltong is cut into much smaller ribbons and is much easier to chew!

Spices in Biltong

Biltong is tasty seasoned with many different spices. Most biltong is seasoned with salt and pepper. Coriander, one of the spices found in curry powder, also makes great seasoning for your biltong. If you like your biltong hot, you can add chili or cayenne pepper.

Biltong seasoning packets like our Crown National Safari Biltong Seasoning contain a mix of these spices. They’re an easy seasoning option if you end up making your own biltong.

How Biltong Is Made

Biltong is made from the lean bottom round cut of beef (the portion of the hindquarter just above the leg). The meat is seasoned with salt, pepper, and spices and air-dried for up to 10 days. Once the meat is dry, it is sliced into thin ribbons and enjoyed.

Since the meat is air-dried, it is technically never cooked! It’s safe to eat, because the drying process removes harmful bacteria. In fact, discovering air-dried meat kept 19th-century South African farmers alive as they journeyed inland from the coast to settle South Africa’s northern plains. Biltong has been a favorite South African snack ever since.
